Need quick and easy dinner ideas? (You can thank me later!)

Good afternoon all. It's pouring here in the Lowcountry which makes me just want to be home snuggled on the couch in a cozy blanket with my loves, while smelling something delicious cooking on the stove or in the crock pot.

Instead of waiting until next Monday to post our dinner menu I figured I would post it today - you can thank my boredom for that. Turns out people don't like to venture out in the pouring rain. Who would've thought?

As usual I only post Monday - Thursday.

Monday - Pan Fried Parmesan Chicken

This is such an easy and delicious meal. You just pound out the chicken breasts or buy them extra thin. Dip them in a melted butter/olive oil mixture and coat with a panko/bread crumb mixture.

With a little olive oil and butter in  your pan, cook on a medium-high stove top until chicken is done. Usually 6 minutes on each side.

Tuesday - Taco Tuesday - ole!

This is self explanatory, but a trick that I have used that gives your taco meat that extra kick is to add about 2 tablespoons of salsa per pound of hamburger meat.

Wednesday - Grilled Chicken Salad 

Thursday - Cajun Shrimp & Rice

All you need is 1 pound of shrimp that you cook stove top with a little finely chopped garlic, salt, pepper and olive oil/butter. Once the shrimp is cooked (usually 5-10 minutes) add it to the cajun flavored rice a roni (cooked of course). It beats seasoning your own rice for "red rice". The cajun style Rice-a-Roni that comes in a box is amazing and has the best homemade flavoring that know one would ever know it wasn't homemade!

Monday - Meatloaf Monday <--I just made that up, like it? 

Ground beef (enough for your family size), package of Lipton's Onion Soup mix, 1 egg, and some bread crumbs ( we always use store bought bread crumbs). You will also want some finely chopped onion, celery, and garlic that you have already sauteed in a pan with a little bit of butter until the onions are translucent. Mix all ingredients together and put in a loaf pan, bake at 350 for about 45.

Tuesday - Fried Porkchops

Wednesday - Crock Pot Chicken-n-Dumplings

Easy yet yummy! All you need to do is put your chicken breasts at the bottom of your crock pot. Add some finely chopped onion, 2 tbs of butter, 1 can cream of chicken, 1 container of chicken broth, salt, pepper, celery, and lastly, some water just to ensure the chicken is covered in juices. Set your crock pot to high and let it cook all day or until the chicken is cooked throughout (about 5 hours). *Side Note - about an hour before you plan on eating, take canned biscuits and cut into quarters, add those to the crock pot and voila - delicious dumplings*

Thursday - Breakfast Burritos

Take a package of Jimmy Deen sausage (ground) brown and drain. Once your'e done cooking the sausage (it will look like ground beef when you're done) add five eggs, scramble them into the sausage. At first this looks disgusting, but eventually you will have crumbles of cooked sausage and cooked eggs. Add the package of cheese depending upon how much you like. We like ours extra cheesy so we use almost all of the package.

Roll these into burrito shells and brown them on a stove top...serve with salsa!

* I've been having a lot of fun with snapchat recently and thought I'd share.








* I've not been impressed with Essie lately. I used to love their colors and the polish itself but the last few times I've painted my nails they chip within days, if not the same day and it truly takes hours for it to dry completely. I've been using Sinful Colors - the cheap stuff for $1.99 that you get from the drug store and it works great with a cheap top coat. Holla!

* I'm coming up with our weekly menu for the next two weeks and I'll share that with you all tomorrow. We have some delicious meals planned and I am ready to make them with some help from my sous chef of course, Cadence.

* I've made a conscious effort as of recently to quote vacations for myself. For instance New York just isn't going to happen, so I'm averaging the costs for hotels, things to do, flights, taxi's, etc. This way I can save away and when I have the cash to go, I'll just tell Tarl to pack a bag! Not only do I have a want for an NYC visit, but I also would love to see London and Paris. I did the math yesterday and hotels were affordable. The 2.5 hour train ride from London to Paris was only $132 per person, affordable. However the flights were absolutely ridiculous. $1200.00, one way per person...are they out of their minds? It looks like that trip is going to have to wait for retirement!

* Cadence's birthday is at the end of the year,but while strolling through Pinterest today I saw some super cute ideas for her 6th birthday. We practically live on a farm, minus the barn. We have chickens, roosters, peacocks, turkeys, bitties, cats, dogs, a full garden and lots of other farm indicative items. How cute would a barnyard birthday be? Aren't these ideas just precious? * We have one T-Ball game left - hallelujah! It's so funny because in the beginning, when your child starts an extra curricular activity everyone is so excited and by the end of it, you cannot wait for it to be over with. All three of us are over T-Ball. Between endless practices, games, meltdowns and mosquitos this one game cannot get here soon enough.

* Rumor has it that Disney is supposed to offer Free Dining tomorrow to Disney Visa card holders. This is just a rumor, but I happen to be a cardholder, and if the rumor is true this will pay off our vacation and save us over $800!

* Please remember to keep everyone who is affected by these storms in your prayers. I couldn't imagine everything being taken away from me within a matter of minutes, or worse, someone. Possessions can be replaced, loved ones cannot. I pray that everyone affected seeks God in their time of need. I pray that they are able to rebuild bigger and stronger than before. I pray for their solace and peace in their time of grief.

weekend

It's Monday morning already. So blessed to be here another day with my wonderful family! Let me catch you up on what we did this weekend...

On Saturday we added a new member to our family, Rosie, a 3 month old chihuahua! She already has our hearts!




Cadence did some bike riding. She's getting pretty good at it and is about ready to take her "stabilizers" training wheels off. Not sure where she got the word stabilizers from, but it's hilarious!



Tarl went fishing with the boys yesterday, so Cadence and I enjoyed some pool time!



I also had some snapchat fun this morning - something to make Monday a little bit brighter.




Unfortunately my plans to go to Jacksonville this coming weekend have been postponed. Unexpected bills are never fun and sometimes neither is being a responsible adult, but we're making the best by me not going by having a date night on Friday night. #SilverLining

Friday Five

I'm not even going to sugar coat it, I'm so glad to be saying adios to this week.  It wasn't bad or even long, just a "bleh" week if you catch my drift. Clients on the phone have been obnoxious and it's part of my job to smile and apologize on behalf of someone else's mistake. It started off today bright and early with three phone calls and five emails later. An argument with a co-worker, where I defended myself and pretty much put them in their place. Sometimes a girls gotta do what a girls gotta do!


On a lighter note, here is my Friday Five!


one. Our entire weekend is going to be sun-filled. The beach tomorrow and fishing on Sunday. I am so ready to relax with my little family with a fishing pole in my hand. Those days are the best.

two. Cadence has been having fun recently. Riding her new bike and of course hide-n-seek.



three. I took the plunge on Wednesday and lightened my hair by adding a lot of highlights. I am so happy with the way that they turned out and it was just the amount of depth that my hair needed to provide a nice summer color.


four. Next week my mom and I are headed to Jacksonville to visit my aunt. To say I am excited is an understatement! Next Friday truly cannot get here quick enough. Lots of shopping and girls time is just what we need.

Without further ado here are some facts about me: one-I not only loathe snakes but I have a very bad irrational fear of them. If there is a snake on TV, I get chills up my spine as if it were in the room with me. If I run over a snake with my car and look back and don't see it in the rear view mirror squished like a pancake, I am terrified that it has somehow got inside my car when I went over it with my tires, just to come bite me to my death. For real, it's bad! two-I've always wanted a personalized license tag but have never broke down and bought one. three-My dream job is to be a Real Housewife of Orange County and be best friends with Tamra, but at this point I'll be a Real Housewife of whatever city Andy Cohen chose me to be in, just not Atlanta (way too much drama for my taste on that show!) four-I never wanted kids, neither did Tarl. We had a mutual agreement on that before we were ever married. I got knocked up on my wedding night - the best unanswered prayer, ever! five-I love being tan, I always feel prettier when I'm bronzed! 
six-I have major road rage and road "attitude". If you follow too close behind I'm going to shoot you an evil look. If you brake and go I'm going to shoot you an evil look. If you don't let me over, you guessed it, an evil look...I have a huge list of "do's and don'ts" for driving. seven-I got my passport several years ago because our cruise line said we had to have one, turns out they never even stamped the damn thing and I'm still holding a grudge about that. I want a stamp in my passport stat! eight-I've always wanted to be a blonde, but I just can't pull it off, trust me I've tried! Being brunette is just who I am. nine-The Office is my all time favorite show. ten-Temple Run 2 is my current addiction. eleven-I'm not a cat person, yet I own one and am in love with him. Seriously Hector is the cutest cat ever!

1. What is your hobby?

Taking pictures. I love it.





2. How is your blogging experience?

Would I love more followers in order to gain sponsorships and one day a steady income from blogging? Absolutely. However, at the end of the day I blog for me, so the experience has been rewarding!

3. What clothing brand do you like the most and why?

Whatever I can afford at the time. Mostly Target and sometimes Walmart, straight up!

4. What is your favorite animal?

Ones that don't piss, shit and can feed themselves. Seeing as how this doesn't exist I'd have to say a dog.

5. What is the most exciting/interesting thing that happened in your life?

Probably the two times I met Jake Owen. It was #2 on my bucket list and I've loved him ever since he came out as an artist. His southern good looks won me over and meeting him was uh.maz.ing!





6. What's your favorite book?

Fifty Shades...I can't wait for the movie!

7. What tv series are your favorites?

Lots...thank goodness for DVR!

When is enough, enough?

First I want to share with you our menu for the next two weeks. I thoroughly enjoy reading what other bloggers have as their meal plans for the week because it gives me ideas on what to cook for my family:

Monday: Baked Ziti w/ Garlic Bread
Tuesday: Jalapeno Cheesy Nachos
Wednesday: Grilled Chicken Salad
Thursday: Fish Fillets

Monday: BBQ
Tuesday: Porkchops
Wednesday Parmesan Baked Chicken
Thursday: Lasagna

I serve the above with a carbohydrate (biscuit, crescent rolls, rice, mashed potatoes, etc.) and a vegetable. It makes it simple and delicious.

Now onto discuss this blog post title...when do you take a step back from a friendship due to giving and not receiving? At what point is enough, enough? For a while I've had a friendship where I am always the one giving. I am the one who makes the effort to visit, talk, bring up conversations, invites to dinners and trying to schedule a girls weekend. After all of this, none of my efforts have ever been reciprocated and all the fun times and vacations I've tried to arrange have been denied due to an excuse after an excuse after an excuse.

To put it simply, I feel as if I'm giving 100% to her nothing. It's sad. I know she loves me. I know she considers me a friend, she just basically stinks at showing it, for lack of better words.

Some times I am moody, down right bitchy, but I praise myself on being honest and a loyal friend. I will truly be there for my friends through thick and thin. When they fall I am there to catch them, and vice versa, however with this one I feel as if I am truly the only one giving. It's always about her problems, her kids, what she has going on and it's gotten to the point to where I don't feel like giving anymore.

I don't want to lose her as a friend, and I won't, however, I have now decided to take a giant step back, ignore, and see if absence truly makes the heart grow fonder. To me friendships aren't always about serious conversations, but about fun as well. If you can't have fun with your friends maybe you should reevaluate that friendship and that is what I am doing. There is always an excuse when I bring up having a girls night. Whenever I try to plan a girls weekend there's a million and one reasons why she can't go and at this point in my life I don't have time to continue to put my best efforts forward into this friendship anymore.

Sometimes you just have to let go and that is where our friendship finally is. I will always love her, and I will continue to be there for her if she needs me, but I'm no longer going to give like I have been. I think it's time for me to be a little bit selfish in this friendship.

Something Unexpected Always Happens! (Easter Recap)

Well lovelies it's Monday morning already. It seems like three day weekends go by quicker than your average two day weekends.

Thursday afternoon I attended the 2014 RBC Heritage as my work sponsored a tent right on the 18th green overlooking the water. To say it was beautiful is an understatement. Pictures were not allowed on Thursday, but I was able to snag a few from the tent!


FYI - this is not edited at all. Beautiful right?!

On Friday Tarl had to work, however I was off so Cadence and I spent a girls day in beautiful Beaufort. I knew Easter wasn't supposed to be sunny and 80 degrees like the entire week had been, so my coral colored spring dress that I purchased specifically for Easter wouldn't work for the 60 degree weather that was planned, so I was on a mission to find a more weather suitable dress.

We had family pictures arranged before our Easter dinner and I knew that we would be outside for at least an hour, so a knee high sleeveless dress just wouldn't work. Thank goodness Belk had this beautiful navy and coral aztec maxi. It was one of those dresses that on the hanger you say "eh" but once you try it on it just works! It was also marked down from $38 to $13 - SOLD!





The rain set in as soon as Cadence and I got home on Friday afternoon, so we spent the rest of the day snuggled in bed until daddy got home.

Once Saturday arrived, so did all the baking to prepare for Easter Sunday. Cadence and I both love baking, and Tarl loves eating our baked treats. So while he napped we whipped up some delicious chocolate "bunny head" cupcakes and some vanilla "bunny tail" cupcakes. We also made rice krispy treats in the shape of little chicks (these were a hit!).




Cadence may have snagged a rice krispy treat or two or three while decorating them.


Even Hector the cat wanted a little bite, believe it not this cat likes marshmallows!


Saturday night after dinner, we made Resurrection Rolls as seen on Pinterest. What a wonderful way to teach kids what our wonderful Lord and Savior, Jesus Christ did for us those many many years ago.

They were very easy to make and something we will be making again for dessert. Once out the oven, they taste just like a warm fresh cinnamon roll. 

Ingredients:

Package of Crescent Rolls
Marshmallows
Cinnamon Sugar 
Melted Butter

Directions:

Open and unroll the crescent rolls as you normally would. The crescent roll is the tomb that Jesus was placed in after he died on the cross for the forgiveness of our sins. The marshmallow is Jesus and you dip that in the melted butter then roll them around in the cinnamon sugar. You place them in the crescent rolls and instead of rolling up you pull all the sides up to make a little tomb. 

Bake per the directions on the crescent roll box and when you cut them open the marshmallows are gone, just like Jesus was once they opened up the tomb. 

Cadence was enamored by this and truly understood the story of Jesus that Tarl and I were explaining to her. 


Saturday night at 9:30 my phone rang...a sign that normally isn't a good one. My sister had became very sick and wasn't going to be able to make it. Mix that with the torrential rain that we had got on Friday and Saturday, this makes for a not so pretty day to take pictures or play games. 

Our pictures and all our Easter games were called off and we all ended up wearing jeans and a t-shirt. We have put our official Easter games and pictures on hold until Angela gets better and our yards dry up enough to take pictures on. Something always happens...that's life, right!?

We still had a wonderful Easter holiday and not only was Cadences spoiled, but so was I!


Cadence loved her bike (gotta love her big t-shirt PJs!) and I very unexpectedly got a Kate Spade purse that I have been eyeing...Tarl loves his girls!








We also made bunny tail pancakes for breakfast...they were delicious!


Naturally it wouldn't be Easter without a trip to the farm with Grandma, Grandaddy and baby chicks!




Easter, round 2, in a couple of weeks, and I'll be sure to share the details when that happens.
