Need quick and easy dinner ideas? (You can thank me later!)

Good afternoon all. It's pouring here in the Lowcountry which makes me just want to be home snuggled on the couch in a cozy blanket with my loves, while smelling something delicious cooking on the stove or in the crock pot.

Instead of waiting until next Monday to post our dinner menu I figured I would post it today - you can thank my boredom for that. Turns out people don't like to venture out in the pouring rain. Who would've thought?

As usual I only post Monday - Thursday.

Monday - Pan Fried Parmesan Chicken

This is such an easy and delicious meal. You just pound out the chicken breasts or buy them extra thin. Dip them in a melted butter/olive oil mixture and coat with a panko/bread crumb mixture.

With a little olive oil and butter in  your pan, cook on a medium-high stove top until chicken is done. Usually 6 minutes on each side.

Tuesday - Taco Tuesday - ole!

This is self explanatory, but a trick that I have used that gives your taco meat that extra kick is to add about 2 tablespoons of salsa per pound of hamburger meat.

Wednesday - Grilled Chicken Salad 

Thursday - Cajun Shrimp & Rice

All you need is 1 pound of shrimp that you cook stove top with a little finely chopped garlic, salt, pepper and olive oil/butter. Once the shrimp is cooked (usually 5-10 minutes) add it to the cajun flavored rice a roni (cooked of course). It beats seasoning your own rice for "red rice". The cajun style Rice-a-Roni that comes in a box is amazing and has the best homemade flavoring that know one would ever know it wasn't homemade!

Monday - Meatloaf Monday <--I just made that up, like it? 

Ground beef (enough for your family size), package of Lipton's Onion Soup mix, 1 egg, and some bread crumbs ( we always use store bought bread crumbs). You will also want some finely chopped onion, celery, and garlic that you have already sauteed in a pan with a little bit of butter until the onions are translucent. Mix all ingredients together and put in a loaf pan, bake at 350 for about 45.

Tuesday - Fried Porkchops

Wednesday - Crock Pot Chicken-n-Dumplings

Easy yet yummy! All you need to do is put your chicken breasts at the bottom of your crock pot. Add some finely chopped onion, 2 tbs of butter, 1 can cream of chicken, 1 container of chicken broth, salt, pepper, celery, and lastly, some water just to ensure the chicken is covered in juices. Set your crock pot to high and let it cook all day or until the chicken is cooked throughout (about 5 hours). *Side Note - about an hour before you plan on eating, take canned biscuits and cut into quarters, add those to the crock pot and voila - delicious dumplings*

Thursday - Breakfast Burritos

Take a package of Jimmy Deen sausage (ground) brown and drain. Once your'e done cooking the sausage (it will look like ground beef when you're done) add five eggs, scramble them into the sausage. At first this looks disgusting, but eventually you will have crumbles of cooked sausage and cooked eggs. Add the package of cheese depending upon how much you like. We like ours extra cheesy so we use almost all of the package.

Roll these into burrito shells and brown them on a stove top...serve with salsa!
